Food and Agriculture is a key sectors in Southeast Asian economies, accounting for about 11% of ASEAN’s gross domestic product (GDP) in 2020 before the pandemic. As in the ASEAN region, Indonesia and Thailand have diverse tropical food products across the country, which play an essential role in society's economic and social aspects. However, several food products have a relatively short shelf life and low quality, thus process innovation, preservation, packaging, and handling strategies are necessary to achieve optimal quality. Therefore, appropriate research and innovation on tropical and local food products are necessary to increase their added value.
